VEGGIE(&/OR ITALIAN TUKREY) PASTA
We eat this once a week and it is Jud approved(which is hard to do)! It is a healthier option for dinner but still feels like you are splurging on pasta! It can be a plant based meal if you cut out the Italian turkey(which I will cut out, but Jud prefers a meat in it - alll about compromise) and the cheese! I use Banza noodles which are made from chickpeas and a great source of protein! If you try it let me know what you think!
INGREDIENTS: (this amount of ingredients is enough for me and Judson and he can take some for lunch the next day)
1 box of Banza Noodles or brown rice noodles (I switch up between the two)
2 Cups of Spinach
1 cut yellow onion
Handful of mushrooms
Handful of cherry tomatoes
Handful of zucchini noodles(optional, sometimes I don’t add this)
Handful of chopped basil
Minced garlic clove
Minced shallot
Jar of Rao’s Arrabbiata sauce (our favorite!!)
Crushed red pepper
Italian ground turkey (do not include if doing plant based)- can get this at Publix
Goat cheese or fresh shaved parmesan (do not include if doing plant based)
INSTRUCTIONS:
Follow instructions on box of Banza noodles to cook those thoroughly (can do this as you cook the rest of the ingredients)
Heat avocado oil on medium on the stove with minced garlic and shallot
Add cut onions and sauté until tender and a golden brown
Then add remaining veggies - zucchini noodles, mushrooms, spinach, and cherry tomatoes - cook until tender
If you choose to do the Italian turkey meatballs then you can be cooking these as well - we roll the Italian ground turkey in little small balls and cook thoroughly on the stove
Once the veggies and meatballs are done I combine them into the same big pot and add the Rao’s sauce and basil, mix all together - heat until sauce is bubbling
I then add the Banza noodles after they are cooked and rinsed with cold water - mix all together
And that’s it! Serve and can top with the cheese of your liking and crushed red pepper if you prefer!
