EASY LEMON GARLIC SALMON

I am all about easy healthy meals during the week and this is one of our favorites we have been doing for the past few years! Doesn’t take much prep time and is packed with flavor! It’s ready in less than 30 minutes and we usually pair with veggies or rice.

To note: I mostly just eye this recipe and don’t do exact measurements but here is my guess

INGREDIENTS:

  • 3 Salmon Filets (I ask for them to cut skin off at the store)

  • 2 tbsp of minced garlic

  • 2 tbsp of avocado oil (or olive oil)

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1/2 tsp dried oregano

  • 1/4 tsp crushed red pepper

  • 2 lemons (one sliced thinly)

INSTRUCTIONS:

  1. Preheat oven to 375 degrees F

  2. Line a pan with foil. Make sure the piece of foil is large enough to fold over and cover the fish

  3. Place salmon on baking sheet and drizzle with avocado oil, salt, pepper, dried oregano, crushed red pepper and minced garlic.

  4. Squeeze the juice of one lemon all over the fish and add the sliced lemon on each salmon filet

  5. Fold sides of foil over the fish and then bake for 13-16 minutes, until the salmon is cooked.

  6. Then open foil and broil the salmon for 2-3 minutes. Be so careful not to burn, have done that many times!

  7. Pair with sides and enjoy!
