We have been eating this on repeat! We have had tons of fresh red snapper lately and I have tried cooking it many different ways, but this has been our favorite! It’s super easy and delicious, you could honestly use this recipe for whatever fish you prefer. We have been pairing this with baked butternut squash and rice.

INGREDIENTS:

  • 2 snapper filets

  • avocado oil

  • sea salt

  • pepper

  • dash of crushed red pepper

  • garlic powder

  • oregano

  • 3 lemons

  • spoonful of capers

INSTRUCTIONS:

  1. Rinse off the snapper and make sure no scales are left on the fish

  2. Lay on a dish to season - drizzle avocado oil on both sides

  3. Then start to season with sea salt, pepper, dash of crushed red pepper, garlic powder, and oregano on each side (never really measured how much I used of the seasonings, just enough to cover the fish - I like mine really blackened so I do a good bit of seasoning on each side)

  4. Now heat avocado oil on nonstick skillet on medium heat

  5. Once heated place fish on skillet and sear each side for about 4 minutes each depending on the size of fish.

  6. Then after I do this I usually heat each side again with higher heat to make crispy

  7. Now squeeze one lemon on both fish and add a spoonful of capers on top and let heat for a little longer

  8. Take off skillet and serve over rice with your choice of sides. And then I squeeze more lemon juice on both fish!
