FIVE MINUTE TOMATO, CHICKPEA, & AVOCADO SALAD

This has been my favorite quick and easy lunch all summer long! One day on my lunch break I just threw this together because that was all I had left from my groceries that week and it instantly became my go-to lunch. It is healthy and takes 5 minutes to put together. A few of y’all have tried it and I hope you have loved it just as much as me!

INGREDIENTS:

  • 1/2 cup Chickpeas (I chill in fridge before)

  • 1 Tomato (I love farmers market tomatoes or heirloom and I also chill in fridge before)

  • 1 Avocado

  • Extra Virgin Olive oil

  • Balsamic Vinegar (linked the one I use below)

  • Salt (Himalayan pink salt is what I use) & pepper

INSTRUCTIONS:

  1. Cut the tomato and avocado into bite size squares

  2. Combine cut tomato, cut avocado, and chickpeas in a bowl

  3. Drizzle with olive oil and balsamic

  4. Season with salt & pepper

  5. Mix together and enjoy! (best served cold in my opinion)
